The North Karnataka cuisine uses all varieties of wheat, lentils, pulses, and vegetables in an entire meal and is, therefore, a good source of protein, vitamins, and carbohydrates. The entire meal is, therefore, very nutritious. The usage of Jaggery, which is better than white sugar, is more in this cuisine than in most other cuisines that one usually comes across.
There is minimum oil added in most dishes to support the food and quality. For example Jolada Rotti is synonymous with North Karnataka cuisine where no oil is used and is a healthy and staple food option. The side dishes are filled with natural vegetables, lentils and pulses, making it highly nutritious and filling.
